- 2 cups uncooked penne pasta (or short pasta)

- 1/2 teaspoon dried Italian herbs
- 2 cups fresh spinach, roughly chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken along with salt and pepper; sauté until cooked through (5-7 minutes).
- Stir in minced garlic and cook for an additional minute until fragrant.
- Pour in chicken broth and bring to a simmer. Reduce heat slightly, then add heavy cream, paprika, and Italian herbs; stir to combine.
- Add uncooked penne pasta directly into the pot; simmer uncovered until pasta is al dente (about 10 minutes), stirring occasionally.
- Fold in chopped spinach and cook just until wilted (2-3 minutes). Adjust seasoning if needed before serving.
