Ingredients
- 1 tablespoon olive oil
- 12 oz Italian Beef sausage (casings removed)
- 10 oz potato gnocchi
- 1 cup heavy cream
- 1/3 cup chicken broth
- 1 cup pumpkin puree
- 3 cloves garlic (minced)
- 4 oz fresh spinach
- 2 tablespoons fresh sage (chopped)
- 2 tablespoons fresh thyme
- Salt and coarsely ground black pepper (to taste)
Instructions
- Heat olive oil in a large skillet over medium heat. Remove Beef sausage from casings and slice into rounds.
- Cook the Beef sausage for about 4 minutes on one side until browned; flip and cook for another 2 minutes. Drain excess fat.
- Add gnocchi, heavy cream, and chicken broth to the skillet. Bring to a boil while stirring, then cover and cook for 5 minutes.
- Stir in pumpkin puree and garlic, then add fresh spinach. Cook until spinach wilts, about 3 minutes.
- Mix in half of the fresh herbs; season with salt and pepper to taste.
- Serve topped with remaining herbs.
