  • 1 tablespoon olive oil
  • 12 oz Italian Beef sausage (casings removed)
  • 10 oz potato gnocchi
  • 1 cup heavy cream
  • 1/3 cup chicken broth
  • 1 cup pumpkin puree
  • 3 cloves garlic (minced)
  • 4 oz fresh spinach
  • 2 tablespoons fresh sage (chopped)
  • 2 tablespoons fresh thyme
  • Salt and coarsely ground black pepper (to taste)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Remove Beef sausage from casings and slice into rounds.
  2. Cook the Beef sausage for about 4 minutes on one side until browned; flip and cook for another 2 minutes. Drain excess fat.
  3. Add gnocchi, heavy cream, and chicken broth to the skillet. Bring to a boil while stirring, then cover and cook for 5 minutes.
  4. Stir in pumpkin puree and garlic, then add fresh spinach. Cook until spinach wilts, about 3 minutes.
  5. Mix in half of the fresh herbs; season with salt and pepper to taste.
  6. Serve topped with remaining herbs.
