Ingredients
- 2 cups butternut squash, peeled and cubed
- 1 tablespoon olive oil
- Salt and pepper to taste
- ½ lb crumbled turkey sausage
- 4 garlic cloves, minced
- 6 oz fresh spinach
- 1 cup heavy cream
- 1/3 cup shredded Parmesan cheese
- 8 oz farfalle (bow tie pasta)
Instructions
- Preheat your oven to 400°F (200°C). Toss the cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for about 25-30 minutes until tender.
- In a large pot, boil salted water and cook farfalle pasta according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, add another tablespoon of olive oil. Add crumbled turkey sausage and cook until browned, then stir in minced garlic for one minute.
- Mix in the roasted squash and spinach; cook until the spinach wilts. Pour in heavy cream, simmer briefly, then stir in cooked pasta along with Parmesan cheese until combined.
- Serve hot with extra Parmesan if desired.
