  • 8 oz farfalle (bow tie pasta)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for about 25-30 minutes until tender.
  2. In a large pot, boil salted water and cook farfalle pasta according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, add another tablespoon of olive oil. Add crumbled turkey sausage and cook until browned, then stir in minced garlic for one minute.
  4. Mix in the roasted squash and spinach; cook until the spinach wilts. Pour in heavy cream, simmer briefly, then stir in cooked pasta along with Parmesan cheese until combined.
