- 18 oz cheese-stuffed tortellini
- 2 large eggs
- 1 cup grated parmesan cheese
- 6 oz diced turkey strips
- 2 cloves minced garlic (optional)
- Freshly ground black pepper
- Salt to taste
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Boil water in a large pot, adding salt when it reaches a rolling boil. Cook the tortellini according to package instructions until al dente, then drain and set aside.
- In a mixing bowl, whisk together the eggs and grated parmesan until smooth. Season with black pepper and salt.
- In a skillet over medium heat, sauté diced turkey strips until browned. If using garlic, add it in the last minute of cooking.
- Reduce heat to low, add the cooked tortellini to the skillet, and pour in the egg mixture while tossing gently to create a creamy sauce.
- Serve immediately, garnished with extra parmesan cheese and chopped parsley if desired.
