- 1 pound chicken thighs (cut into 2-inch strips)
- 2 large eggs
- 1 cup mochiko flour
- 1/4 cup potato starch
- 1/4 cup soy sauce
- 2 tablespoons sugar
- 4 cloves garlic (minced)
- 1 tablespoon ginger (minced)
- Spicy mayo for serving
Instructions
- Marinate the chicken: In a bowl, mix soy sauce, sugar, garlic, ginger, and add chicken strips. Refrigerate for at least 30 minutes.
- Prepare the coating: Whisk eggs until frothy in one bowl; combine mochiko flour and potato starch in another bowl.
- Coat the chicken: Dip marinated chicken in egg mixture, then coat with flour mixture; shake off excess.
- Fry the chicken: Heat oil in a pan over medium heat. Fry coated chicken strips until golden brown on all sides (about 5-7 minutes). Drain on paper towels.
- Serve: Arrange on a platter and drizzle with spicy mayo.
