Ingredients
- 6 medium carrots, peeled
- 2 tablespoons extra virgin olive oil
- ½ teaspoon kosher salt
- 2 teaspoons minced garlic
- ½ teaspoon onion powder
- ½ teaspoon red pepper flakes
- 1 teaspoon chopped fresh rosemary
- 2 cups grated parmesan cheese (divided)
- Chopped parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the carrots into 2-inch sections and then slice each piece in half lengthwise.
- In a mixing bowl, combine olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary. Toss in the prepared carrots until fully coated.
- Spread 1 ½ cups of grated parmesan on the lined baking sheet as a base.
- Place the carrot pieces cut-side down on top of the cheese.
- Sprinkle any remaining parmesan over the arranged carrots.
- Roast in the preheated oven for 30-35 minutes until golden brown and tender.
- Serve immediately, garnished with chopped parsley.
