  • 6 medium carrots, peeled
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 teaspoons minced garlic
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon chopped fresh rosemary
  • 2 cups grated parmesan cheese (divided)
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the carrots into 2-inch sections and then slice each piece in half lengthwise.
  3. In a mixing bowl, combine olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary. Toss in the prepared carrots until fully coated.
  4. Spread 1 ½ cups of grated parmesan on the lined baking sheet as a base.
  5. Place the carrot pieces cut-side down on top of the cheese.
  6. Sprinkle any remaining parmesan over the arranged carrots.
  7. Roast in the preheated oven for 30-35 minutes until golden brown and tender.
  8. Serve immediately, garnished with chopped parsley.
