Instructions
- In a pot, bring vegetable broth to a boil. Gradually whisk in cornmeal until thickened. Stir in grated Parmesan cheese and salt until well combined.
- Spread the polenta mixture onto a baking sheet lined with parchment paper. Allow it to cool completely before cutting into rounds using a cookie cutter or glass.
- Heat olive oil in a non-stick frying pan over medium heat. Carefully place polenta rounds in the hot oil, frying until golden brown on both sides (approximately 3-4 minutes per side). Use a spatula to flip gently.
- Transfer fried polenta rounds to a baking sheet and keep warm in the oven if needed. Season with black pepper before serving.
