Ingredients

1 lb boneless, skinless chicken breasts or thighs
1 (4 oz) can diced green chiles
1 (15 oz) can cannellini beans, drained and rinsed
1 (15 oz) can great northern beans, drained and rinsed
2 tablespoons fresh cilantro, chopped
2 tablespoons lime juice
2 cups chicken broth
1 cup onion, chopped
3 cloves garlic, minced
½ teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon chili powder
8 oz cream cheese, softened

Instructions

  • Place the chicken breasts or thighs in the bottom of the crockpot.
  • Add the diced green chiles, cannellini beans, great northern beans, chopped onion, and minced garlic.
  • Sprinkle in the cumin, oregano, salt, black pepper, and chili powder.
  • Pour in the chicken broth and stir gently to combine.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender.
  • Remove the chicken from the crockpot and shred it using two forks.
  • Return the shredded chicken to the crockpot.
  • Add the softened cream cheese and stir until it melts into the chili and becomes creamy.
  • Stir in the lime juice and chopped cilantro.
  • Let the chili cook for another 10–15 minutes until everything is well combined.
