- 2 stalks of celery (2 cups chopped)
- 1 Granny Smith apple
- 1 avocado
- 1 lemon
- Fresh mint leaves
- 1 clove of garlic
- 1/2 tsp vinegar
- 1 tbsp cold-pressed oil
- Pinch of salt
Instructions
- Chop celery and apple into bite-sized pieces. Grate or press the garlic.
- Cut the avocado in half, remove the seed, and slice without cutting through the skin.
- Scoop out the avocado cubes into a large bowl with chopped celery and apple. Squeeze lemon juice over to prevent browning.
- In a small bowl, mash some avocado cubes with a fork. Add cold-pressed oil, vinegar, and salt; mix until creamy.
- Finely chop mint leaves and add them to the bowl. Pour the dressing over the mixture and gently toss until well combined.
- Adjust seasoning if needed and serve immediately for maximum crunch.
