  • 2 stalks of celery (2 cups chopped)
  • 1 Granny Smith apple
  • 1 avocado
  • 1 lemon
  • Fresh mint leaves
  • 1 clove of garlic
  • 1/2 tsp vinegar
  • 1 tbsp cold-pressed oil
  • Pinch of salt

Instructions

  1. Chop celery and apple into bite-sized pieces. Grate or press the garlic.
  2. Cut the avocado in half, remove the seed, and slice without cutting through the skin.
  3. Scoop out the avocado cubes into a large bowl with chopped celery and apple. Squeeze lemon juice over to prevent browning.
  4. In a small bowl, mash some avocado cubes with a fork. Add cold-pressed oil, vinegar, and salt; mix until creamy.
  5. Finely chop mint leaves and add them to the bowl. Pour the dressing over the mixture and gently toss until well combined.
  6. Adjust seasoning if needed and serve immediately for maximum crunch.
