  • 1 English cucumber (sliced into rounds then quartered)
  • 2 cups grape tomatoes (sliced in half)
  • ½ cup red onion (sliced into thin strips)
  • 2 Tbsp chopped parsley
  • ¼ cup extra virgin olive oil
  • 3 Tbsp red apple vinegar
  • 1 Tbsp granulated sugar (or honey)
  • 1 tsp dried basil
  • ½ tsp salt
  • ¼ tsp ground black pepper

Instructions

  1. Wash all vegetables thoroughly under cold water.
  2. Slice the English cucumber into rounds and then quarter each slice.
  3. Slice the grape tomatoes in half.
  4. Cut the red onion into thin strips.
  5. In a small bowl, whisk together olive oil, apple vinegar, sugar (or honey), dried basil, salt, and black pepper.
  6. In a large mixing bowl, combine all chopped vegetables and drizzle with the dressing. Toss gently until well combined.
  7. Cover and chill in the refrigerator for at least 2 hours before serving to allow flavors to meld.
