- 1 English cucumber (sliced into rounds then quartered)
- 2 cups grape tomatoes (sliced in half)
- ½ cup red onion (sliced into thin strips)
- 2 Tbsp chopped parsley
- ¼ cup extra virgin olive oil
- 3 Tbsp red apple vinegar
- 1 Tbsp granulated sugar (or honey)
- 1 tsp dried basil
- ½ tsp salt
- ¼ tsp ground black pepper
Instructions
- Wash all vegetables thoroughly under cold water.
- Slice the English cucumber into rounds and then quarter each slice.
- Slice the grape tomatoes in half.
- Cut the red onion into thin strips.
- In a small bowl, whisk together olive oil, apple vinegar, sugar (or honey), dried basil, salt, and black pepper.
- In a large mixing bowl, combine all chopped vegetables and drizzle with the dressing. Toss gently until well combined.
- Cover and chill in the refrigerator for at least 2 hours before serving to allow flavors to meld.
