  • 1 teaspoon whole coriander seeds
  • 1 tablespoon apple vinegar
  • 1 teaspoon salt
  • 1 teaspoon peanut oil
  • 2 teaspoons cornstarch
  • 1/2 cup homemade chili oil
  • 3 tablespoons chinkiang vinegar
  • 4 teaspoons light soy sauce
  • 4 teaspoons dark soy sauce
  • 8 cloves garlic (minced)
  • 2 inches ginger (minced)
  • 1 red onion (thinly sliced)
  • 1 hot green chili (sliced)
  • 1/2 bunch cilantro (chopped)

Instructions

  1. Prepare noodle dough and set water to boil.
  2. Marinate thinly sliced lamb with cumin seeds, sichuan peppercorns, garlic, ginger, vinegar, salt, peanut oil, and cornstarch.
  3. Heat oil in a wok over high heat; sear the lamb until browned.
  4. Add garlic, ginger, onion, and chili; stir-fry until fragrant.
  5. Pour in chili oil and vinegar; combine with boiled noodles.
  6. Garnish with fresh cilantro before serving.
