- Homemade hand-pulled noodles or wide wheat noodles
- Thinly sliced lamb
- 2 tablespoons whole cumin seeds
- 2 teaspoons sichuan peppercorns
- 1 teaspoon whole coriander seeds
- 1 tablespoon apple vinegar
- 1 teaspoon salt
- 1 teaspoon peanut oil
- 2 teaspoons cornstarch
- 1/2 cup homemade chili oil
- 3 tablespoons chinkiang vinegar
- 4 teaspoons light soy sauce
- 4 teaspoons dark soy sauce
- 8 cloves garlic (minced)
- 2 inches ginger (minced)
- 1 red onion (thinly sliced)
- 1 hot green chili (sliced)
- 1/2 bunch cilantro (chopped)
Instructions
- Prepare noodle dough and set water to boil.
- Marinate thinly sliced lamb with cumin seeds, sichuan peppercorns, garlic, ginger, vinegar, salt, peanut oil, and cornstarch.
- Heat oil in a wok over high heat; sear the lamb until browned.
- Add garlic, ginger, onion, and chili; stir-fry until fragrant.
- Pour in chili oil and vinegar; combine with boiled noodles.
- Garnish with fresh cilantro before serving.
