  • 2 tablespoons Taco Seasoning
  • 4 ounces Cream Cheese (regular or dairy-free)
  • 1 cup Shredded Cheddar Cheese
  • 4 Low-Carb Tortillas
  • 1 cup Sour Cream (or Greek yogurt)
  • 1 cup Lettuce (shredded)
  • 1 medium Tomato (or bell peppers)
  • 1 cup Extra Cheddar Cheese
  • 1/4 cup Cilantro (or parsley)
  • 1/2 cup Jalapeño Slices (optional)
  • 1 tablespoon Olive Oil
  • 2 tablespoons Butter (unsalted)
  • 1/4 cup Heavy Whipping Cream (or coconut cream)

Instructions

  1. In a non-stick skillet over medium heat, melt the butter and brown the ground beef. Drain excess fat.
  2. Stir in taco seasoning and cream cheese until well combined. Add heavy whipping cream and cheddar cheese until melted; remove from heat.
  3. On each tortilla, add about 1/4 cup of the beef mixture, followed by sour cream, lettuce, tomatoes, extra cheese, cilantro, and jalapeños if desired.
  4. Fold in the edges of the tortilla and cook seam side down in a skillet with olive oil until golden brown on both sides.
