- 1 pound Ground Beef (or ground chicken/turkey)
- 2 tablespoons Taco Seasoning
- 4 ounces Cream Cheese (regular or dairy-free)
- 1 cup Shredded Cheddar Cheese
- 4 Low-Carb Tortillas
- 1 cup Sour Cream (or Greek yogurt)
- 1 cup Lettuce (shredded)
- 1 medium Tomato (or bell peppers)
- 1 cup Extra Cheddar Cheese
- 1/4 cup Cilantro (or parsley)
- 1/2 cup Jalapeño Slices (optional)
- 1 tablespoon Olive Oil
- 2 tablespoons Butter (unsalted)
- 1/4 cup Heavy Whipping Cream (or coconut cream)
Instructions
- In a non-stick skillet over medium heat, melt the butter and brown the ground beef. Drain excess fat.
- Stir in taco seasoning and cream cheese until well combined. Add heavy whipping cream and cheddar cheese until melted; remove from heat.
- On each tortilla, add about 1/4 cup of the beef mixture, followed by sour cream, lettuce, tomatoes, extra cheese, cilantro, and jalapeños if desired.
- Fold in the edges of the tortilla and cook seam side down in a skillet with olive oil until golden brown on both sides.
