Ingredients
- 8 tortillas (corn or flour)
- 2 cups refried beans (or mashed black beans)
- 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 2 cups enchilada sauce (red or green)
- 1 tablespoon oil
- 1/4 cup diced onions (optional)
- 1/4 cup chopped cilantro (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine refried beans and half of the shredded cheese until well mixed.
- Spread some enchilada sauce on the bottom of a greased baking dish.
- Place a generous scoop of the bean mixture on each tortilla, roll tightly, and place seam-side down in the dish.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle with the rest of the cheese.
- Bake for about 30 minutes or until bubbly and golden brown.
