  • 8 tortillas (corn or flour)
  • 2 cups refried beans (or mashed black beans)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 2 cups enchilada sauce (red or green)
  • 1 tablespoon oil
  • 1/4 cup diced onions (optional)
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine refried beans and half of the shredded cheese until well mixed.
  3. Spread some enchilada sauce on the bottom of a greased baking dish.
  4. Place a generous scoop of the bean mixture on each tortilla, roll tightly, and place seam-side down in the dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with the rest of the cheese.
  6. Bake for about 30 minutes or until bubbly and golden brown.
