  • 1 cup shelled pistachios (unsalted)
  • 1/4 cup powdered sugar
  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 4 ounces dark chocolate
  • 2 tablespoons butter (for chocolate mixture)
  • Additional chopped pistachios for garnish

Instructions

  1. Prepare the pistachio filling by pulsing shelled pistachios in a food processor until finely ground. Add powdered sugar, softened butter, vanilla extract, and salt; process until smooth. Chill the filling for about 15 minutes.
  2. In a microwave-safe bowl, melt dark chocolate and remaining butter in intervals until smooth.
  3. Preheat your oven to 350°F (175°C).
  4. Slice each croissant horizontally without cutting all the way through. Spread pistachio filling inside and drizzle with melted chocolate.
  5. Close the croissant and place it on a parchment-lined baking sheet. Bake for 5–7 minutes until warmed through.
