- 8 large store-bought croissants
- 1 cup shelled pistachios (unsalted)
- 1/4 cup powdered sugar
- 2 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 4 ounces dark chocolate
- 2 tablespoons butter (for chocolate mixture)
- Additional chopped pistachios for garnish
Instructions
- Prepare the pistachio filling by pulsing shelled pistachios in a food processor until finely ground. Add powdered sugar, softened butter, vanilla extract, and salt; process until smooth. Chill the filling for about 15 minutes.
- In a microwave-safe bowl, melt dark chocolate and remaining butter in intervals until smooth.
- Preheat your oven to 350°F (175°C).
- Slice each croissant horizontally without cutting all the way through. Spread pistachio filling inside and drizzle with melted chocolate.
- Close the croissant and place it on a parchment-lined baking sheet. Bake for 5–7 minutes until warmed through.
- Finish with more melted chocolate, sprinkle with chopped pistachios, and dust with powdered sugar.
