Ingredients
- 1 1/2 pounds strawberries (quartered or sliced)
- 1/3 cup granulated sugar
- 2 tablespoons fresh lemon juice
- 2 teaspoons cornstarch
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare the strawberries by slicing or dicing them as desired. Set aside one-third for later.
- In a saucepan, combine two-thirds of the strawberries with sugar over medium heat.
- In a small bowl, whisk together lemon juice, cornstarch, vanilla extract, and salt until smooth. Add this mixture to the saucepan.
- Stir until boiling, then reduce heat and cook for 4-5 minutes until thickened.
- Remove from heat and mix in the reserved strawberries. Let cool before storing.
