- 2 hard-boiled eggs
- 1 cup cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1 tbsp fresh chives, chopped
- Salt & freshly cracked black pepper, to taste
Instructions
- Boil the eggs in water for 9-10 minutes. Cool under cold water before peeling and slicing.
- Thinly slice the cucumber and halve the cherry tomatoes.
- Arrange cucumber slices in a shallow bowl, followed by the halved tomatoes and sliced eggs.
- Garnish with chopped chives and season with salt and pepper to taste. Serve immediately or chill for later.
