Ingredients

  • 2 hard-boiled eggs
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp fresh chives, chopped
  • Salt & freshly cracked black pepper, to taste

Instructions

  1. Boil the eggs in water for 9-10 minutes. Cool under cold water before peeling and slicing.
  2. Thinly slice the cucumber and halve the cherry tomatoes.
  3. Arrange cucumber slices in a shallow bowl, followed by the halved tomatoes and sliced eggs.
  4. Garnish with chopped chives and season with salt and pepper to taste. Serve immediately or chill for later.
