- 2 ripe pears, halved and cored
- 4 oz blue cheese, crumbled
- 1/4 cup chopped walnuts, toasted
- 1 tbsp honey (plus extra for drizzling)
- 1 tbsp balsamic vinegar
- Ground black pepper to taste
- Fresh thyme sprigs (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Halve and core the pears.
- Toast walnuts in a dry skillet over medium heat for 3-5 minutes, then chop.
- In a bowl, mix crumbled blue cheese and chopped walnuts; add optional honey.
- Stuff each pear half with the mixture.
- Drizzle honey and balsamic vinegar over stuffed pears; sprinkle with black pepper.
- Place on a baking sheet and bake for 15-20 minutes until tender and cheese is melted.
- Garnish with thyme sprigs before serving.
