  • 2 medium oranges (about 400 g), boiled and pureed
  • 150 g almond meal
  • 100 g shelled pistachios, finely ground
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 170°C (340°F) and line a 23 cm (9 inch) springform pan with parchment paper.
  2. Boil the oranges in water for about 60 minutes until soft. Cool, remove seeds, and puree until smooth.
  3. In a large bowl, whisk together eggs and sugar until pale. Stir in orange puree.
  4. In another bowl, mix almond meal, ground pistachios, baking powder, and salt. Gently fold into the egg mixture until just combined.
  5. Pour the batter into the prepared pan and bake for 50 to 60 minutes until set.
  6. Allow cooling in the pan for 10 minutes before transferring to a wire rack.
