Ingredients
- 4 red onions
- 4 tablespoons salted butter
- 4–6 slices hearty white bread
- 3 cups shredded Gruyere cheese
- 1 can beef broth (14.5 oz)
- 1/3 cup apple juice or vinegar
- 2 tablespoons salted butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon dried thyme leaves
- 1/4 teaspoon pepper
Instructions
- Caramelize the onions by melting butter in a Dutch oven over medium heat. Add sliced onions and sprinkle with sugar. Cook for about 35 minutes until soft and golden.
- For the dipping broth, melt additional butter in the same pot, whisk in flour, then add thyme, apple juice (or vinegar), beef broth, and pepper. Stir until thickened.
- Assemble sandwiches by buttering bread slices, toasting them in a frying pan, adding Gruyere cheese and caramelized onions between two slices, cooking until melted.
- Serve sliced sandwiches with warm dipping broth on the side.
