Ingredients
- 8 onions
- 2 garlic cloves
- 50g butter
- 1200ml beef stock
- 15 sprigs thyme
- 400g baguette
- 150g Comté cheese
- Olive oil
- Salt
- Black pepper
Instructions
- Peel and slice the onions.
- In a large saucepan over medium heat, combine olive oil, onions, and a pinch of salt.
- Cook the onions until soft and golden brown (about 30 minutes), stirring occasionally.
- Add sliced garlic and butter; cook for an additional 5 minutes until fragrant.
- Pour in beef stock and add thyme leaves; simmer for another 10 minutes.
- Season to taste with salt.
- Slice the baguette and place it into oven-proof bowls filled with soup.
- Generously grate Comté cheese on top and broil until melted and golden.
