  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 ½ cups canned corn kernels, drained
  • 1 medium jalapeño pepper, seeded and diced
  • 1 small red bell pepper, diced
  • 3 green onions, sliced
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon taco seasoning
  • ½ teaspoon ground cumin
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ¼ cup fresh lime juice (about 2 limes)
  • 2 tablespoons chipotle sauce
  • Chili Cheese Fritos, reserving a handful for topping

Instructions

  1. In a large bowl, combine the coleslaw mix, black beans, corn kernels, jalapeño pepper, red bell pepper, green onions, cilantro, taco seasoning, and cumin. Mix well.
  2. In a separate bowl, whisk together sour cream and mayonnaise until smooth. Add lime juice and chipotle sauce; whisk until fully combined.
  3. Pour the dressing over the salad mixture and gently toss to coat.
  4. Fold in all but a handful of Chili Cheese Fritos to maintain their crunch.
  5. Serve immediately topped with reserved Fritos for added texture.
