Ingredients
- 95 g all-purpose flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 225 g dark chocolate, chopped
- 56 g butter
- 1 teaspoon vanilla extract
- 2 eggs (room temperature)
- 100 g caster sugar
- 90 g demerara sugar
- 85 g chocolate chips
Instructions
- Preheat your oven to 160ºC (320ºF) for fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
- Melt dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth. Mix in vanilla extract.
- In another bowl, whisk eggs and sugars on high speed until light and fluffy.
- Sift together flour, cocoa powder, baking powder, and salt. Stir in chocolate chips.
- Fold the melted chocolate mixture into the egg mixture gently to retain airiness.
- Combine the dry ingredients with the wet batter using a spatula until just mixed.
- Scoop tablespoons of batter onto the prepared tray with space between each scoop. Bake for about 12-14 minutes until set with crackly tops.
- Allow cooling on the tray before transferring to a wire rack.
