Ingredients
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 cup crushed peppermint candies (divided)
- 1/2 cup semi-sweet chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Melt the butter in a microwave-safe bowl or on the stovetop; let cool slightly.
- In a large bowl, mix melted butter and granulated sugar until smooth. Add eggs and vanilla extract, blending well.
- In another bowl, whisk together flour, cocoa powder, and salt. Gradually combine this dry mixture with the wet ingredients until just mixed.
- Fold in half of the crushed peppermint candies and chocolate chips if using.
- Pour batter into the prepared pan and sprinkle remaining crushed peppermint on top. Bake for 30-35 minutes until a toothpick inserted comes out with moist crumbs.
- Allow to cool completely before lifting out of the pan using the parchment paper overhang; cut into squares.
