  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup crushed peppermint candies (divided)
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Melt the butter in a microwave-safe bowl or on the stovetop; let cool slightly.
  3. In a large bowl, mix melted butter and granulated sugar until smooth. Add eggs and vanilla extract, blending well.
  4. In another bowl, whisk together flour, cocoa powder, and salt. Gradually combine this dry mixture with the wet ingredients until just mixed.
  5. Fold in half of the crushed peppermint candies and chocolate chips if using.
  6. Pour batter into the prepared pan and sprinkle remaining crushed peppermint on top. Bake for 30-35 minutes until a toothpick inserted comes out with moist crumbs.
  7. Allow to cool completely before lifting out of the pan using the parchment paper overhang; cut into squares.
