- 4 large bell peppers
- 1 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 4 tbsp butter
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet over medium heat, melt the butter and sauté minced garlic until fragrant (about 1-2 minutes). Add shrimp; cook until pink (3-4 minutes) and chop into small pieces.
- In a mixing bowl, combine chopped shrimp with breadcrumbs, Parmesan cheese, salt, and pepper.
- Stuff each bell pepper generously with the shrimp mixture.
- Place stuffed peppers in a baking dish; bake for 25-30 minutes until peppers are tender.
- Garnish with chopped parsley before serving.
