  • 4 large bell peppers
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet over medium heat, melt the butter and sauté minced garlic until fragrant (about 1-2 minutes). Add shrimp; cook until pink (3-4 minutes) and chop into small pieces.
  4. In a mixing bowl, combine chopped shrimp with breadcrumbs, Parmesan cheese, salt, and pepper.
  5. Stuff each bell pepper generously with the shrimp mixture.
  6. Place stuffed peppers in a baking dish; bake for 25-30 minutes until peppers are tender.
  7. Garnish with chopped parsley before serving.
