Ingredients
- 3 medium potatoes
- 10–12 medium shrimp
- 1 cup broccoli florets
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 2 tbsp butter
- 1 cup milk
- 2 cloves garlic
- 1 tsp olive oil
- 1 tsp paprika
- Salt & black pepper, to taste
Instructions
- Boil potatoes in salted water until fork-tender (about 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
- Heat olive oil in a skillet over medium heat. Add broccoli and diced peppers; season with salt and pepper. Sauté for 4-5 minutes until tender but still vibrant.
- In a separate skillet, melt butter with olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant. Add shrimp, paprika, salt, and pepper; cook for 2-3 minutes per side until pink and slightly golden.
- Spoon mashed potatoes onto one side of the plate. Arrange shrimp and vegetables on the other side. Garnish with black pepper if desired.
