  • 8 chicken drumsticks
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper
  • 600 g potatoes, cubed
  • 3 carrots, chopped
  • 1 red bell pepper, chopped

Instructions

  1. Preheat your oven to 200C (390F).
  2. In a mixing bowl, combine olive oil, minced garlic, dried thyme, oregano, paprika, salt, and pepper. Add chicken drumsticks and toss to coat.
  3. In another bowl, mix cubed potatoes, chopped carrots, and red bell pepper with olive oil and seasonings.
  4. Spread the vegetables on a baking tray and nestle the marinated chicken among them.
  5. Roast everything for 40-45 minutes, turning the drumsticks halfway through for even browning.
  6. Garnish with fresh parsley before serving hot.
