Ingredients
- 8 chicken drumsticks
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp paprika
- Salt & pepper
- 600 g potatoes, cubed
- 3 carrots, chopped
- 1 red bell pepper, chopped
Instructions
- Preheat your oven to 200C (390F).
- In a mixing bowl, combine olive oil, minced garlic, dried thyme, oregano, paprika, salt, and pepper. Add chicken drumsticks and toss to coat.
- In another bowl, mix cubed potatoes, chopped carrots, and red bell pepper with olive oil and seasonings.
- Spread the vegetables on a baking tray and nestle the marinated chicken among them.
- Roast everything for 40-45 minutes, turning the drumsticks halfway through for even browning.
- Garnish with fresh parsley before serving hot.
