  • 12 oz twisted pasta (gemelli or fusilli)
  • 4 tbsp unsalted butter
  • 4 cloves garlic
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • ½ tsp crushed red pepper flakes, optional
  • Fresh parsley or dried herbs for garnish

Instructions

  1. Boil salted water in a large pot and cook twisted pasta until al dente. Drain and set aside.
  2. Season chicken strips with Cajun seasoning, smoked paprika, salt, and pepper. Press grated Parmesan onto the chicken.
  3. Heat olive oil and 2 tablespoons of butter in a skillet over medium-high heat. Sear the chicken strips for about 5-7 minutes until golden brown.
  4. In the same skillet, melt remaining butter, sauté minced garlic for about 30 seconds, then add heavy cream and chicken broth; simmer.
  5. Whisk in softened cream cheese until smooth; gradually stir in mozzarella, cheddar, and Parmesan until thickened.
  6. Season sauce with Italian seasoning and crushed red pepper flakes if desired. Combine cooked pasta with sauce; simmer on low for about 12 minutes.
  7. Serve topped with garlic Parmesan chicken strips and garnish as desired.
