Ingredients
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 cups sliced carrots
- 1 medium red bell pepper, chopped
- 1 medium yellow bell pepper, chopped
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- Wash and chop vegetables into uniform pieces.
- In a large mixing bowl, combine veggies with olive oil, minced garlic, salt, pepper, oregano, and thyme. Toss until coated evenly.
- Spread the mixture in an even layer on a baking sheet.
- Roast for 25-30 minutes or until tender and caramelized; stir halfway through.
- Remove from the oven and garnish with fresh parsley before serving.
