  • 1 tbsp unsalted butter
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 tsp dried basil
  • ½ cup chicken broth
  • ¼ cup dry apple vinegar
  • 3 tbsp chopped basil leaves
  • 3 tbsp grated Parmesan
  • crushed red pepper flakes

Instructions

  1. Preheat oven to 200°C (400°F) if baking later.
  2. Season chicken fillets with salt, pepper, garlic powder, and paprika.
  3. Heat olive oil and butter in a skillet over medium-high heat; cook chicken for about 5 minutes on each side until browned and cooked through.
  4. Remove chicken; add garlic and shallot to the same skillet and sauté for 2 minutes.
  5. Deglaze with apple vinegar, then stir in salt, pepper, basil, tomato paste, and chicken broth; simmer for 5 minutes.
  6. Add cherry tomatoes; nestle chicken back into the sauce, top with mozzarella and basil.
  7. Simmer for an additional 5 minutes or bake for 10 until golden.
