Ingredients
- 4 chicken fillets
- 1 can (14 oz) cherry tomatoes
- 4 garlic cloves
- 1 shallot
- 2 tbsp tomato paste
- 2 mozzarella balls
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp sweet paprika
- 1 tsp dried basil
- ½ cup chicken broth
- ¼ cup dry apple vinegar
- 3 tbsp chopped basil leaves
- 3 tbsp grated Parmesan
- crushed red pepper flakes
Instructions
- Preheat oven to 200°C (400°F) if baking later.
- Season chicken fillets with salt, pepper, garlic powder, and paprika.
- Heat olive oil and butter in a skillet over medium-high heat; cook chicken for about 5 minutes on each side until browned and cooked through.
- Remove chicken; add garlic and shallot to the same skillet and sauté for 2 minutes.
- Deglaze with apple vinegar, then stir in salt, pepper, basil, tomato paste, and chicken broth; simmer for 5 minutes.
- Add cherry tomatoes; nestle chicken back into the sauce, top with mozzarella and basil.
- Simmer for an additional 5 minutes or bake for 10 until golden.
