Ingredients

  • ½ batch rough puff pastry or store-bought puff pastry
  • 1 cup fig jam
  • ½ cup caramelized onions, roughly chopped
  • 4 ounces goat cheese
  • Fresh thyme sprigs

Instructions

  1. Preheat your oven to 400ºF and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a floured surface to ⅛-inch thickness and cut out circles using a cutter.
  3. Dock the centers of each circle with a fork and brush with egg wash.
  4. Add caramelized onions to each circle followed by pieces of goat cheese.
  5. Pipe fig jam into the center.
  6. Bake for 12 minutes until puffed, then return to bake for an additional 5–8 minutes until golden brown.
  7. Garnish with fresh thyme before serving warm or at room temperature.
