- 4 large Yukon Gold potatoes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1/2 teaspoon dried dill
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup fresh parsley, finely chopped
- 1 medium red onion, finely chopped
- 1/4 cup feta cheese, crumbled
Instructions
- Preheat the oven to 425°F (220°C).
- Wash the potatoes thoroughly and cut them into sticks approximately 1/3 inch wide.
- Soak the cut fries in cold water for 10 to 15 minutes to remove excess starch. Drain and dry thoroughly.
- In a large bowl, mix olive oil, salt, oregano, dill, black pepper, and garlic powder. Toss in the dried fries until evenly coated.
- Line a baking sheet with parchment paper and spread fries in a single layer. Bake for 15 minutes; flip and bake for an additional 6 to 8 minutes until golden brown.
- Transfer to a serving plate and top with parsley, red onion, and feta cheese before serving warm.
