  • 4 large Yukon Gold potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup fresh parsley, finely chopped
  • 1 medium red onion, finely chopped
  • 1/4 cup feta cheese, crumbled

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the potatoes thoroughly and cut them into sticks approximately 1/3 inch wide.
  3. Soak the cut fries in cold water for 10 to 15 minutes to remove excess starch. Drain and dry thoroughly.
  4. In a large bowl, mix olive oil, salt, oregano, dill, black pepper, and garlic powder. Toss in the dried fries until evenly coated.
  5. Line a baking sheet with parchment paper and spread fries in a single layer. Bake for 15 minutes; flip and bake for an additional 6 to 8 minutes until golden brown.
  6. Transfer to a serving plate and top with parsley, red onion, and feta cheese before serving warm.
