Ingredients

  • 8 chicken pieces
  • 4 potatoes
  • Salt
  • Pepper
  • Oregano
  • Paprika
  • 100 ml lemon juice
  • 100 ml olive oil
  • 5 garlic cloves
  • 1 large onion
  • 1 tbsp fresh rosemary
  • 1.5 tbsp honey
  • 1.5 tbsp mustard

Instructions

  1. Preheat the oven to 175°C (fan forced).
  2. Place chicken skin side up in a lined baking dish.
  3. Cut potatoes into even pieces and position them around the chicken.
  4. Season both chicken and potatoes generously with salt, pepper, oregano, and paprika.
  5. Flip the chicken skin side down; season this side as well.
  6. Blend together lemon juice, olive oil, garlic, onion, rosemary, honey, and mustard until smooth.
  7. Pour half of the marinade over the chicken and potatoes; coat well.
  8. Flip the chicken back to skin side up and pour remaining marinade on top.
  9. Cover with wet baking paper followed by aluminum foil; bake for 90 minutes.
  10. Remove covers for the last 30 minutes to allow browning.
  11. Let rest for 10 minutes before serving.
