  • 1 lb beef stew meat, cubed
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 can (14 oz) crushed tomatoes
  • 1 tbsp tomato paste
  • 1 cup orzo pasta
  • 2 ½ cups water or beef broth
  • Cinnamon stick or ground cinnamon
  • Bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add cubed beef and brown on all sides for about 5–7 minutes.
  2. Stir in chopped onions and minced garlic; sauté until soft, around 3–4 minutes.
  3. Mix in tomato paste and cook for another minute. Then add crushed tomatoes and broth.
  4. Season with cinnamon stick or ground cinnamon, bay leaf, salt, and pepper. Bring to a simmer and cook uncovered for about 25–30 minutes.
  5. Add the orzo pasta to the pot and stir well. Cook for an additional 10 minutes while stirring often, adding more broth if necessary.
  6. Once the orzo is tender and the sauce thickens, remove from heat and garnish with fresh parsley before serving.
