- 1 lb beef stew meat, cubed
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 can (14 oz) crushed tomatoes
- 1 tbsp tomato paste
- 1 cup orzo pasta
- 2 ½ cups water or beef broth
- Cinnamon stick or ground cinnamon
- Bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add cubed beef and brown on all sides for about 5–7 minutes.
- Stir in chopped onions and minced garlic; sauté until soft, around 3–4 minutes.
- Mix in tomato paste and cook for another minute. Then add crushed tomatoes and broth.
- Season with cinnamon stick or ground cinnamon, bay leaf, salt, and pepper. Bring to a simmer and cook uncovered for about 25–30 minutes.
- Add the orzo pasta to the pot and stir well. Cook for an additional 10 minutes while stirring often, adding more broth if necessary.
- Once the orzo is tender and the sauce thickens, remove from heat and garnish with fresh parsley before serving.
