  • 1 cup cooked white rice
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes
  • 23 lettuce leaves
  • Red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1 tbsp fresh herbs (parsley, dill, or cilantro), chopped
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt & pepper, to taste

Instructions

  1. Season the chicken breast with salt and pepper, then grill or pan-sear for 5-6 minutes on each side until cooked through. Slice into strips.
  2. Cook rice according to package instructions and let cool slightly.
  3. In a mixing bowl, combine Greek yogurt, chopped herbs, lemon juice, olive oil, salt, and pepper; mix well.
  4. Prepare vegetables by slicing cucumber and tomatoes and tearing lettuce.
  5. Assemble your bowl by layering rice at the base, adding chicken strips, vegetables, and a dollop of herb yogurt sauce on top.
