Ingredients
- 1 chicken breast
- 1 cup cooked white rice
- 1 cup cucumber, sliced
- 1 cup cherry tomatoes
- 2–3 lettuce leaves
- Red onion, thinly sliced
- 1 cup plain Greek yogurt
- 1 tbsp fresh herbs (parsley, dill, or cilantro), chopped
- 1 tsp lemon juice
- 1 tsp olive oil
- Salt & pepper, to taste
Instructions
- Season the chicken breast with salt and pepper, then grill or pan-sear for 5-6 minutes on each side until cooked through. Slice into strips.
- Cook rice according to package instructions and let cool slightly.
- In a mixing bowl, combine Greek yogurt, chopped herbs, lemon juice, olive oil, salt, and pepper; mix well.
- Prepare vegetables by slicing cucumber and tomatoes and tearing lettuce.
- Assemble your bowl by layering rice at the base, adding chicken strips, vegetables, and a dollop of herb yogurt sauce on top.
