Ingredients
- 1 lb lean ground beef
- 1 yellow onion, diced
- 1 taco seasoning packet (or 2 tbsp homemade)
- 2 tbsp olive oil
- 2 medium sweet potatoes, peeled and diced
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper to taste
- 1 avocado, sliced
- 1 cup cottage cheese
- 2 tbsp hot honey
Instructions
- Preheat your oven to 400°F.
- Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper in a mixing bowl. Spread on a baking sheet and roast for 40–45 minutes until tender and golden.
- In a skillet over medium heat, heat olive oil and sauté diced onion until softened. Add ground beef and taco seasoning; cook until browned.
- Assemble each bowl by layering roasted sweet potatoes at the bottom, followed by cooked ground beef, sliced avocado, and cottage cheese on top.
- Drizzle hot honey over each bowl before serving.
