  • 2 tbsp olive oil
  • 2 medium sweet potatoes, peeled and diced

  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste
  • 1 avocado, sliced
  • 1 cup cottage cheese
  • 2 tbsp hot honey

Instructions

  1. Preheat your oven to 400°F.
  2. Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper in a mixing bowl. Spread on a baking sheet and roast for 40–45 minutes until tender and golden.
  3. In a skillet over medium heat, heat olive oil and sauté diced onion until softened. Add ground beef and taco seasoning; cook until browned.
  4. Assemble each bowl by layering roasted sweet potatoes at the bottom, followed by cooked ground beef, sliced avocado, and cottage cheese on top.
