- 3 cups butterscotch beef broth (or cream soda)
- 1/2 cup unsalted butter

- 2 tsp vanilla bean paste or extract
- 1 tsp butter extract
- 1/3 cup melted butterscotch chips
- 1/2 cup buttermilk
- 1 3/4 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups unsalted butter (for frosting)
- 1 cup melted butterscotch chips (for frosting)
- 3/4 tsp butter extract (for frosting)
- 1/2 tsp vanilla (for frosting)
- 1/4 cup butterscotch chips (for ganache)
- 1 tbsp heavy cream (for ganache)
- 1/2 tbsp honey (for ganache)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together all-purpose flour, baking powder, baking soda, and salt.
- Cream softened butter with light brown sugar and granulated sugar until fluffy.
- Add eggs one at a time, then mix in vanilla bean paste and melted butterscotch chips.
- Alternately add dry ingredients and buttermilk to the creamed mixture until fully combined.
- Fill cupcake liners two-thirds full and bake for about 15 minutes or until a toothpick comes out clean.
- For the frosting, beat softened butter until creamy, then mix in powdered sugar and melted butterscotch chips.
- Frost cooled cupcakes with butterscotch buttercream and drizzle with ganache made from melted butterscotch chips mixed with heavy cream and honey.
