  • 1 1/2 lbs boneless skinless chicken breast (cut into 1 inch chunks)
  • 1/4 cup coconut aminos (or soy sauce if you aren't gluten free)
  • 1/4 cup 100% pineapple juice (use the juice from the canned pineapple below)
  • 1 tablespoon honey
  • 1 teaspoon ground ginger
  • 2 cloves garlic minced
  • 2 teaspoons sesame oil
  • 1/2 teaspoon kosher salt
  • 2 red bell peppers (cut into 1 inch chunks)
  • 1 medium red onion (cut into 1 inch chunks)
  • 1 (20 ounce) can pineapple chunks (in 100% juice)
  • 1215 wooden skewers

Instructions

  1. Whisk together the coconut aminos, pineapple juice, honey, ginger, garlic, sesame oil, and salt in a medium bowl.
  2. Place the diced chicken in another medium bowl and pour half of the marinade over it. Cover the leftover marinade and store it in the fridge to use later as a sauce.
  3. Stir to coat the chicken well, then seal with a lid or plastic wrap. Marinate in the fridge for at least one hour or up to two days.
  4. Before you're ready to cook and serve, place wooden skewers in warm water to soak for about 30 minutes. While they soak, chop all your veggies to save time.
  5. Remove marinated chicken from the fridge. Alternate adding diced chicken, onion, pineapple chunks, and red pepper onto each skewer. Leave an inch or so on either end for easy handling. Discard any remaining chicken marinade from the bowl.
  6. Preheat your air fryer to 400°F. Cook kabobs for 12-15 minutes, turning halfway through cooking time. If desired, place them on a baking sheet and broil on high for an additional 2-3 minutes to char slightly—keep an eye on them to avoid over charring.
  7. While kabobs are cooking, heat the remaining marinade in a saucepan over medium-high heat. Whisk cornstarch or tapioca flour with one tablespoon of water until smooth; add it to the pot. Bring mixture to a boil while stirring frequently until it thickens enough to coat the back of a spoon (about one minute). Remove from heat.
  8. Brush cooked kabobs with thickened sauce before serving. Enjoy them alongside fluffy coconut rice for a delicious meal!
