Ingredients
- 2 large apples, peeled and chopped
- 3 medium carrots, peeled and chopped
- 1 small onion, diced
- 1 tbsp fresh ginger, grated
- 2 cups vegetable broth

- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté diced onion until soft (3-4 minutes).
- Add chopped apples, carrots, and grated ginger; cook for 5 minutes.
- Pour in vegetable broth; bring to a boil then reduce heat.
- Cover and simmer for 20 minutes to meld flavors.
- Blend until smooth using an immersion blender or regular blender.
- Season with salt and pepper to taste; serve warm.
