- 2 eggs
- 1 cooked turkey sausage link, sliced
- 1 cup sweet potato, cubed

Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
- In a skillet over medium heat, sauté minced garlic in a touch of oil until fragrant. Add chopped greens and cook until wilted; season with salt and pepper.
- Slice the turkey sausage and pan-sear in the same skillet until browned on both sides (about 2-3 minutes).
- Whisk eggs in a mixing bowl; pour into a nonstick pan over medium-low heat. Stir gently to scramble until fluffy; season to taste.
- In a serving bowl, layer scrambled eggs, sautéed greens, pan-seared sausage slices, roasted sweet potatoes, and avocado.
