- 1 cup all-purpose flour

- 3–4 large peaches, peeled, pitted, and sliced

- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1/2 cup all-purpose flour (for crumb topping)
- 1/4 cup granulated sugar (for crumb topping)
- 1/4 cup brown sugar (for crumb topping)
- 1/4 teaspoon cinnamon (for crumb topping)
- 1/4 teaspoon salt (for crumb topping)
- 1/4 cup unsalted butter, melted (for crumb topping)
Instructions
- Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- In a mixing bowl, combine flour, granulated sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Press into the bottom of the pan and bake for 15–18 minutes until golden.
- In another bowl, mix sliced peaches, sugar, flour, lemon juice, and vanilla; let sit.
- For the crumb topping, blend flour, sugars, cinnamon, and salt; stir in melted butter until crumbly.
- Spread peach filling over crust and top evenly with crumbs.
- Bake for 45–50 minutes until golden brown and bubbly. Allow to cool before slicing.
