  • 1 cup diced canned tomatoes (with juice)
  • 1 medium zucchini, grated
  • A large handful of spinach, chopped
  • 1 cup black beans, rinsed and drained (optional)
  • 1 cup corn kernels (optional)
  • 1 cup cheddar cheese, grated

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the sweet potatoes and pierce them several times with a fork. Place on a baking sheet.
  3. Bake sweet potatoes for about 45 minutes until tender when pierced with a fork.
  4. In a skillet over medium heat, warm olive oil. Sauté garlic until fragrant, then add ground turkey and cook until browned.
  5. Stir in spices (cumin, paprika, oregano, chili powder) and diced tomatoes; cook for 5 minutes.
  6. Add grated zucchini and chopped spinach; cook until wilted. If using, mix in black beans and corn.
  7. Cut baked sweet potatoes lengthwise; fluff inside with a fork. Spoon turkey filling into each potato.
  8. Top with cheddar cheese and return to oven briefly until cheese melts.
