Ingredients
- 4 medium-sized sweet potatoes
- 1 pound lean ground turkey
- 2 cloves garlic, finely chopped
- 1 cup diced canned tomatoes (with juice)
- 1 medium zucchini, grated
- A large handful of spinach, chopped
- 1 cup black beans, rinsed and drained (optional)
- 1 cup corn kernels (optional)
- 1 cup cheddar cheese, grated
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the sweet potatoes and pierce them several times with a fork. Place on a baking sheet.
- Bake sweet potatoes for about 45 minutes until tender when pierced with a fork.
- In a skillet over medium heat, warm olive oil. Sauté garlic until fragrant, then add ground turkey and cook until browned.
- Stir in spices (cumin, paprika, oregano, chili powder) and diced tomatoes; cook for 5 minutes.
- Add grated zucchini and chopped spinach; cook until wilted. If using, mix in black beans and corn.
- Cut baked sweet potatoes lengthwise; fluff inside with a fork. Spoon turkey filling into each potato.
- Top with cheddar cheese and return to oven briefly until cheese melts.
