Ingredients
- 1 lb lean ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 6 medium flour tortillas
- 1 can refried beans
- 1 can red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato, diced
- 1 green onion, diced
- 1 small can sliced black olives
Instructions
- Preheat the oven to 375°F. Spray baking sheets with non-stick spray and arrange tortillas; bake for 3-5 minutes per side until crispy.
- In a skillet, cook ground beef until browned; drain grease.
- Stir in taco seasoning and water; simmer for 10 minutes.
- Warm refried beans in the microwave; spread on one tortilla.
- Layer cooked beef on top, add a second tortilla, then spread enchilada sauce and sprinkle cheeses. Top with diced tomatoes, green onion, and olives.
- Repeat layering with remaining ingredients.
- Bake for an additional 5 minutes until cheese is melted. Let cool slightly before slicing.
