  • 1 packet taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can refried beans
  • 1 can red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat the oven to 375°F. Spray baking sheets with non-stick spray and arrange tortillas; bake for 3-5 minutes per side until crispy.
  2. In a skillet, cook ground beef until browned; drain grease.
  3. Stir in taco seasoning and water; simmer for 10 minutes.
  4. Warm refried beans in the microwave; spread on one tortilla.
  5. Layer cooked beef on top, add a second tortilla, then spread enchilada sauce and sprinkle cheeses. Top with diced tomatoes, green onion, and olives.
  6. Repeat layering with remaining ingredients.
  7. Bake for an additional 5 minutes until cheese is melted. Let cool slightly before slicing.
