- 1/2 cup smooth peanut butter (for filling)
- 1 1/2 cups powdered sugar
- 2 tablespoons whole milk
- 1/4 teaspoon pure vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, combine flour, baking soda, and salt. In another bowl, beat softened butter and brown sugar until creamy. Add peanut butter and mix well before incorporating the egg and vanilla.
- Gradually add the dry mixture to the wet ingredients until combined.
- Roll tablespoon-sized balls of dough in sugar and place on baking sheets; gently flatten each ball.
- Bake for about 10 minutes or until lightly golden, then cool on wire racks.
- For the filling, beat together softened butter and peanut butter before gradually adding powdered sugar and mixing in milk and vanilla.
- Once cooled, spread filling between two cookies to create sandwiches.
