Ingredients
- 10 tablespoons unsalted butter (softened)
- 1/2 cup light brown sugar (packed)
- 3/4 cup granulated sugar (divided)
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 ounce packet of hot chocolate mix
- 3 tablespoons unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 120 mini vegan marshmallows
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, beat together the softened butter, brown sugar, and half of the granulated sugar until fluffy.
- Add the egg and vanilla extract; mix until fully combined.
- Gradually incorporate the flour, hot chocolate mix, cocoa powder, baking soda, and salt into the wet mixture until just combined.
- Using a cookie scoop, form about 24 balls of dough. Flatten slightly and place on the prepared baking sheet.
- Top each cookie with several mini marshmallows and wrap dough around them to seal.
- Roll in remaining granulated sugar before baking for about 10-12 minutes until tops crack slightly.
