  • 1/2 cup light brown sugar (packed)
  • 3/4 cup granulated sugar (divided)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 ounce packet of hot chocolate mix
  • 3 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 120 mini vegan marshmallows

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together the softened butter, brown sugar, and half of the granulated sugar until fluffy.
  3. Add the egg and vanilla extract; mix until fully combined.
  4. Gradually incorporate the flour, hot chocolate mix, cocoa powder, baking soda, and salt into the wet mixture until just combined.
  5. Using a cookie scoop, form about 24 balls of dough. Flatten slightly and place on the prepared baking sheet.
  6. Top each cookie with several mini marshmallows and wrap dough around them to seal.
  7. Roll in remaining granulated sugar before baking for about 10-12 minutes until tops crack slightly.
