  • 1/4 cup olive oil
  • 2 tablespoons red apple vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • Fresh parsley for garnish
  • Lemon slices for serving

Instructions

  1. In a medium bowl, whisk together honey, olive oil, red apple vinegar, minced garlic, oregano, red pepper flakes, salt, and pepper until well combined.
  2. Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Ensure the chicken is fully coated. Seal or cover and refrigerate for at least 30 minutes (preferably 2-4 hours).
  3. Preheat your oven to 400°F (200°C). Remove the chicken from the marinade (discard the marinade) and place it in a baking dish.
  4. Top each chicken breast with crumbled feta cheese.
  5. Bake for 25 to 30 minutes until the internal temperature reaches 165°F (75°C) and the feta is golden.
  6. Let the chicken rest for about 5 minutes before serving. Garnish with chopped parsley and serve with lemon wedges on the side.
