- 8 large eggs
- 6 strips turkey bacon (chopped)
- 2 medium potatoes (diced)
- 1/2 cup heavy cream

Instructions
- Preheat your oven to 375°F.
- In a skillet over medium heat, cook the chopped turkey bacon until crispy, then set aside on paper towels.
- In the same skillet, add diced potatoes and cook until golden brown and tender.
- In a mixing bowl, whisk together eggs and heavy cream; season with salt and pepper.
- Pour the egg mixture over the cooked potatoes and gently stir to combine.
- Top with crispy turkey bacon and grated cheddar cheese.
- Cook on stovetop for about 3 minutes until edges start to set.
- Transfer the skillet to the oven and bake for 15–20 minutes until set in the center.
- Garnish with chopped chives before serving.
