- 1 cup plain flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup vegetable oil
- 1/3 cup sour cream (or Greek yogurt)
- 1/4 cup white sugar
- 1/2 cup packed light brown sugar
- 1 teaspoon vanilla essence
- 1 1/2 cups finely grated zucchini
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In one bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, combine eggs, vegetable oil, sour cream, sugars, and vanilla until smooth.
- Fold the grated zucchini into the wet ingredients.
- Gradually mix in the dry ingredients until just combined.
- Stir in half of the chocolate chips and pour the batter into the prepared loaf pan. Top with remaining chocolate chips.
- Bake for approximately 55 minutes or until a toothpick comes out clean.
- Allow cooling for about 10 minutes before transferring to a wire rack.
