- 2 cups fresh spinach, finely chopped
- 1 cup crumbled feta cheese
- 1/2 cup almond flour
- 1 large egg
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the chopped spinach, feta cheese, almond flour, egg, olive oil, garlic powder, salt, and black pepper. Stir until well mixed.
- Using a spoon or scoop, portion tablespoon-sized amounts of the mixture onto the prepared baking sheet and flatten slightly.
- Bake in the preheated oven for 15-18 minutes or until golden brown and crispy.
- Let cool for about 5 minutes before serving.
