Ingredients
- 6 large eggs
- 4 strips thick-cut turkey bacon, cooked and crumbled
- 3 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon sugar
- Pinch of salt
- Pinch of black pepper
- Smoked paprika (for garnish)
- Fresh chives (optional for garnish)
Instructions
- Boil the Eggs: Place eggs in a saucepan with cold water covering them by an inch. Boil over high heat, then cover and remove from heat for 10-12 minutes.
- Cool and Peel: Transfer eggs to an ice bath for 5 minutes before peeling and slicing each in half lengthwise.
- Prepare Filling: Scoop yolks into a bowl, mash until smooth, and mix in mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, pepper, and most of the crumbled turkey bacon.
- Assemble: Spoon or pipe the yolk mixture back into each egg white half.
- Garnish and Chill: Top with reserved turkey bacon, sprinkle with smoked paprika and chopped chives if desired. Chill for at least 30 minutes before serving.
