- 4 large lemons
- 2 cups granulated sugar
- 1 cup water
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Wash and dry the lemons, then zest them while avoiding the white pith. Juice the lemons, discarding any seeds.
- In a pot, combine lemon juice, zest, sugar, and water. Stir until sugar is fully dissolved.
- Bring to a boil over medium heat; then reduce to a simmer for 30-40 minutes while stirring occasionally until it reaches gel-like consistency.
- To test doneness, place a small amount on a cold plate; if it gels after cooling slightly, it's ready.
- Remove from heat, let cool slightly, and pour into sterilized jars. Seal tightly and allow to cool completely.
